In the first year the plant builds up a storage of sugars in the taproot, the "edible carrot" and then blooms and produces seed in the second year. However, for normal human consumption the plant is harvested in the first season and the taproot is marketed and consumed before the plant has proper time to produce its fruit, (seeds).
