Did You Know? (43 Across) The carrot is a biennial plant, meaning the normal life cycle of the plant require two years from germination to complete. In the first year the plant builds up a storage of sugars in the taproot, the "edible carrot" and then blooms and produces seed in the second year. However, for normal human consumption the plant is harvested in the first season and the taproot is marketed and consumed before the plant has proper time to produce its fruit, (seeds). The carrot is rich in antioxidants, along with beta-carotene which is converted to Vitamin A by the human body after consumption. The vegetable is also a good source of the minerals, potassium and manganese and contains large amounts of Vitamin K. One average size carrot contains approximately 45 calories.
